Ingredients for Pineapple And Rice In Lettuce Wraps Recipe

  • Pineapple slices canned 2

  • Cooked basmati rice 1/2 cup

  • Iceberg lettuce leaves 4

  • Red bell pepper 1/4 medium

  • Cucumber peeled 1/2 medium

  • Fresh coriander leaves 1/3 bunch

  • Salt to taste

  • Red chilli powder (deghi mirch) 1/2 teaspoon

  • Lemon juice 4 tablespoons

  • Honey 2 tablespoons

  • Extra virgin olive oil 1 1/2 tablespoons


Step 1

Chop pineapple slices. Finely chop capsicum. Seed cucumber and chop roughly. Chop coriander leaves.

Step 2

Transfer all chopped vegetables and pineapple into bowl.

Step 3

Add rice, salt, red chilli powder, lemon juice, honey and oil. Mix well and chill in a refrigerator.

Step 4

Place some rice mixture in each lettuce cup and serve immediately.
