Ingredients
- 4 tinned pineapple slices + for garnishing
- 4 tinned peaches + for garnishing
- 1 cup coconut milk
- 4 scoops vanilla icecream
- 4 fresh mint sprigs
Method
- Chop pineapple slices and put into a blender jar. Chop peaches and add to the jar and blend.
- Add ½ cup coconut milk and blend again. Add vanilla icecream and blend again.
- Pour into 4 glasses. Decorate the rim with small pieces of pineapple and peach and a sprig of fresh mint.
- Serve chilled.
