Pineapple pudding

Ingredients list for Pineapple pudding

  • 1 Pineapple peeled and cut into cubes
  • 7 tablespoons Sugar
  • as required Digestive biscuits
  • 10 Dates
  • 10 Cashewnuts
  • 1 cup Milk
  • 200 millilitres Condensed milk
  • 1 teaspoon Gelatin
  • 1 cup Fresh cream

Method

  1. Heat three tablespoons sugar add pineapple and cook on high heat till the water evaporates. Remove and let it cool.
  2. Layer these pineapples in a pudding tray. Layer marie biscuits on top of it followed by cashenuts and dates.
  3. In another pan mix together milk, three tablespoons sugar and condensed milk and bring it to boil. Dissolve gelatin in hot water and add it to the milk.
  4. Pour the milk mixture on top of the pineapple layer and set it in the refrigerator.
  5. Beat the cream with remaining sugar and then pour this over the cooled pudding.
  6. Serve chilled garnished with sliced almonds.
