Ingredients for Pineapple pudding Recipe

  • Pineapple peeled and cut into cubes 1

  • Sugar 7 tablespoons

  • Digestive biscuits as required

  • Dates 10

  • Cashewnuts 10

  • Milk 1 cup

  • Condensed milk 200 millilitres

  • Gelatin 1 teaspoon

  • Fresh cream 1 cup

Method

Step 1

Heat three tablespoons sugar add pineapple and cook on high heat till the water evaporates. Remove and let it cool.

Step 2

Layer these pineapples in a pudding tray. Layer marie biscuits on top of it followed by cashenuts and dates.

Step 3

In another pan mix together milk, three tablespoons sugar and condensed milk and bring it to boil. Dissolve gelatin in hot water and add it to the milk.

Step 4

Pour the milk mixture on top of the pineapple layer and set it in the refrigerator.

Step 5

Beat the cream with remaining sugar and then pour this over the cooled pudding.

Step 6

Serve chilled garnished with sliced almonds.
