Ingredients list for Pizza Roll Ups

  • 20 grams Fresh yeast
  • 1 teaspoon Sugar
  • 2 teaspoons Salt
  • 1 1/2 cups for dusting Refined flour (maida)
  • 1 tbsp + for greasing Olive oil
  • 1/4 cup Pizza sauce
  • 1/2 cup Mozzarella cheese , grated
  • 1/4 cup Sweetcorn kernels , boiled
  • 4-5 Button mushrooms , chopped
  • 1/4 cup Mixed capsicums , finely chopped
  • 1 Pickled jalapeno , chopped
  • to sprinkle Dried oregano
  • to sprinkle Red chilli flakes

Method

  1. Place yeast in a big bowl, add sugar, 1 tsp salt and 2-3 tbsps of warm water and set aside for 10-15 minutes.
  2. Add flour, olive oil and remaining salt to the activated yeast and mix well. Add sufficient water and knead into soft dough. Cover with a wet muslin cloth and set aside for 15-20 minutes in a warm place.
  3. Preheat the oven to 200°C. Grease a baking tray with oil.
  4. Dust some flour on the work table, place the dough over it and roll it into a thin rectangular sheet.
  5. Apply pizza sauce and sprinkle mozzarella cheese. Top with corn, mushrooms, mixed capsicums and jalapeno. Sprinkle dried oregano and chilli flakes.
  6. Roll tightly and cut into thick slices. Place the slices on a baking tray keeping some distance between each and bake for 10-15 minutes. Remove the tray from the oven and let them cool.
  7. Wrap in Freshwrapp and pack them in the tiffin box.
