Pokhal Bhaat This is how rice kanji is made in Orissa This recipe is from FoodFood TV channel By Sanjeev Kapoor 24 Aug 2016 in Recipes Course New Update Main Ingredients Cooked Rice, Strained rice water in which rice was cooked Cuisine Odia Course Rice Prep Time 0-5 minutes Cook time 8-10 hour Serve 4 Taste Mild Level of Cooking Moderate Others Veg Ingredients list for Pokhal Bhaat 2 cups Cooked Rice 3 cups Strained rice water in which rice was cooked 1 tablespoon Oil 4-5 Dried red chillies 4 Green chillies to taste Rock salt For garnishing Salted peanuts 1 small onion finely chopped Juice of ¼ lemon Black salt A lemon wedge Method Place boiled rice in a bowl and mash it with a spoon. Add strained rice water and mash further. Mix well and set aside overnight. Heat oil in a non-stick pan, add dried red chillies and sauté till crisp. Switch off the heat, drain the chillies on absorbent paper. Break green chillies and place in a mortar, add rock salt and pound with a pestle. For serving, place mashed rice in a bowl. Top it with peanuts, onion, lemon juice, pounded green chillies, black salt, a lemon wedge. Crush red chillies and sprinkle on top and serve.
