Add cornflour, salt, crushed black peppercorns and fresh thyme, and mix well. Heat a little oil in a non-stick pan, place a medium size cookie cutter, put a portion of potato mixture, flatten to make a small thick disc and gently remove the cookie cutter. Drizzle some butter all around and cook on medium heat, turning sides, till both sides are evenly golden and crisp. Drain them on absorbent paper. Similarly cook the rest.
