Ingredients

  • 18-20 medium prawns, cleaned, deveined and washed
  • 4 eggs
  • Salt to taste
  • 2 tablespoons oil
  • 2-3 green chillies, chopped
  • 1 medium onion, chopped
  • 1 medium tomato, chopped
  • ½ teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 6-7 button mushrooms, chopped
  • 3-4 tablespoons chopped coriander leaves
  • 3-4 tablespoons grated processed cheese
  • Toasted bread slices to serve

Method

  1. In a bowl, break eggs, add salt, and whisk well with a fork. 
  2. Heat 1 tablespoon oil in a non-stick pan, green chillies, onion and tomato. Cook for 1-2 minutes, mixing occasionally.
  3. Add salt, turmeric powder, red chilli powder, mix well. Add prawns and sauté for 1 minute.
  4. Add mushrooms, mix well and cook for 1 minute. Add the eggs and coriander leaves, and cheese. Cover and cook for 2-3 minutes.
  5. Loosen the edges and fold the omelette in half, slide onto a serving plate.
  6. Serve hot along with toasted bread slices.
