  • 10 Prunes
  • 3 Pears
  • 1/4 cup + tablespoons Sugar
  • 1/4 teaspoon Ginger grated
  • 220 grams Refined flour (maida)
  • 115 grams Chilled butter cubes

Method

  1. Preheat oven to 200° C.
  2. Quarter pears, remove core and roughly chop them. Put the pieces in a non-stick pan. Add ¼ cup water and 2 tbsps sugar and mix and cook for 4-5 minutes.
  3. Halve the prunes and add to the pears in the pan. Add grated ginger and cook for 2-3 minutes more. Switch off heat and let the mixture cool.
  4. Take flour in a large bowl, add butter cubes and rub with finger tips till the mixture resembles breadcrumbs. Add ¼ cup sugar and mix.
  5. Put the pear-prune mixture in a glass baking dish but do not level it. Sprinkle the flour mixture over it. Keep the baking dish in the preheated oven and bake for 25-30 minutes.
  6. Let it cool slightly, spoon out into serving bowls and serve.
