Ingredients list for Pumpkin Cake

  • 3/4 cup pumpkin puree
  • 1/2 grams brown sugar/jaggery
  • 1/4 cup + for greasing Olive oil
  • 1 cup Rolled oats
  • 1/2 cup Buttermilk
  • 3/4 cup + for dusting Refined flour (maida)
  • 1/2 cup Sugar
  • 2 Eggs
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Nutmeg powder
  • 1 teaspoon Vanilla essence
  • a pinch Salt

Method

  1. Preheat oven to 180°C. Grease an aluminium baking tin and dust with flour.
  2. Mix oats and buttermilk with milk in a bowl. Add pumpkin puree and mix well. Add brown sugar and sugar and mix again. Break eggs and add and whisk well.
  3. Sieve together flour, baking powder, baking soda, nutmeg powder and salt into the bowl and mix everything well.
  4. Add vanilla essence and olive oil and mix well.
  5. Pour batter into the baking tin and place in preheated oven. Bake for 30 minutes.
  6. Slice and serve.
