Ingredients list for Pumpkin Chocolate Chip Bread

  • 1 1/2 cups pumpkin puree
  • 1/2 cup chocolate chips
  • 1 3/4 cups Refined flour (maida)
  • 1/2 cup + Oil
  • 1 teaspoon Baking soda
  • 2 teaspoons Cinnamon powder
  • 1/4 teaspoon Nutmeg powder
  • 1/4 teaspoon Clove powder
  • 3/4 teaspoon Salt
  • 2 Eggs
  • 3/4 cup Granulated sugar
  • 1/2 cup brown sugar/jaggery
  • 1/4 cup Orange juice

Method

  1. Preheat oven to 170° C. Grease a loaf tin with some oil and dust with some flour.
  2. Put flour, baking soda, cinnamon powder, nutmeg powder, clove powder and salt in a bowl and mix well.
  3. Put eggs, granulated sugar and brown sugar in another bowl and whisk together till combined. Add pumpkin puree, oil and orange juice and mix well. Add this mixture to the flour mixture and mix gently.
  4. Fold in the chocolate chips and mix until well combined. Pour the batter into the prepared tin, place the tin in the preheated oven and bake for sixty to sixty-five minutes.
  5. Remove from oven and cool. Remove from the mould, slice and serve.
