Ingredients list for Pumpkin Muffins

  • 1 1/2 cups Pumpkin puree
  • 2 cups Refined flour
  • 2 tablespoons Coffee liqueur
  • 1 cup Butter
  • 1 cup Powdered sugar
  • 2 Eggs
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Cinnamon powder
  • 1/4 teaspoon Nutmeg (jaiphal) powder
  • 1/2 teaspoon Ginger grated
  • 2 tablespoons Milk
  • for dusting Icing sugar

Method

  1. Preheat oven to 180°C.
  2. Pour coffee liqueur into a bowl, add butter and powdered sugar and beat with an electric beater till light. Add eggs and beat well. Add pumpkin puree and beat again.
  3. Add flour, baking soda, baking powder, salt, cinnamon powder, nutmeg powder and ginger and beat till you get a lump free batter. Add milk and mix well. Transfer the batter in a piping bag fitted with a nozzle.
  4. Pipe the batter into cupcake moulds till ¾ full. Place the in the preheated oven and bake for 15-20 minutes. Remove from oven, cool and demould.
  5. Place them on a serving platter, dust icing sugar on top and serve.
