Ingredients for Pumpkin Seed Biscuits Recipe

  • Pumpkin seeds ½ cup + 2 tablespoons

  • Refined flour (maida) 1¼ cups

  • Olive oil 1 cup

  • Yogurt 4 tablespoons

  • Juice of 1 lemon

  • light brown sugar ¾ cup

  • Oats roasted 1 cup

  • Desiccated coconut ½ cup

  • Zest of 3 lemons

Method

Step 1

Preheat oven to 180°C.

Step 2

Whisk together olive oil, yogurt, lemon juice and brown sugar till well mixed.

Step 3

Add flour, oats, desiccated coconut and lemon zest and mix till a sticky dough is formed.

Step 4

Divide the mixture into 24 equal portions and place them on a baking tray. Press them lightly.

Step 5

Place the tray in the preheated oven and bake for 10-15 minutes. Remove from heat and cool.

Step 6

Serve or store in an air tight container.
