These biscuits are made with pumpkin seeds, refined flour, olive oil and some other ingredients. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Pumpkin Seed Biscuits

  • ½ cup + 2 tablespoons Pumpkin seeds
  • 1¼ cups Refined flour (maida)
  • 1 cup Olive oil
  • 4 tablespoons Yogurt
  • Juice of 1 lemon
  • ¾ cup light brown sugar
  • 1 cup Oats roasted
  • ½ cup Desiccated coconut
  • Zest of 3 lemons

Method

  1. Preheat oven to 180°C.
  2. Whisk together olive oil, yogurt, lemon juice and brown sugar till well mixed.
  3. Add flour, oats, desiccated coconut and lemon zest and mix till a sticky dough is formed.
  4. Divide the mixture into 24 equal portions and place them on a baking tray. Press them lightly.
  5. Place the tray in the preheated oven and bake for 10-15 minutes. Remove from heat and cool.
  6. Serve or store in an air tight container.
