Ingredients for Pumpkin Seed Cookies Recipe

  • Pumpkin seeds ¾ cup

  • Refined flour (maida) 2 cups

  • Unsweetened cocoa powder ½ cup

  • Baking powder ½ teaspoon

  • Cinnamon powder ½ teaspoon

  • Paprika smoked ½ teaspoon

  • brown sugar/jaggery ¾ cup

  • Castor sugar (caster sugar) 1 cup

  • Butter 1 cup + 2 tablespoons

  • Eggs 2

  • Chocolate chips ½ cup

Method

Step 1

Preheat oven to 180º C. Line a baking tray with parchment paper.

Step 2

Dry roast pumpkin seeds till golden. Set aside to cool.

Step 3

Sift together flour, cocoa powder, baking powder, cinnamon powder and paprika into a bowl and mix well.

Step 4

Cream together brown sugar, castor sugar and butter in another bowl till fluffy.

Step 5

Add eggs, one at a time, and beat again. Add the flour mixture, gradually, and fold in well.

Step 6

Add chocolate chips and roasted pumpkin seeds and mix well.

Step 7

Divide the mixture into 12 equal portions and place on the lined tray, keeping some gap in between.

Step 8

Place the tray in the preheated oven and bake for 12-15 minutes. Remove from heat and cool.

Step 9

Serve or store in an air tight container.
