Knead into stiff dough. Cover with a damp cloth and set aside to rest for 10-15 minutes. Divide the dough into equal portions, apply a little oil and roll out into puris. Heat sufficient oil in a kadai. Deep-fry the puris, one at a time, till golden brown and crisp. Drain on absorbent paper.
