This recipe is from FoodFood TV channel By Sanjeev Kapoor 11 Jun 2021 in Recipes Course New Update Quinoa Stuffed Tomatoes Main Ingredients Quinoa, Firm red tomatoes Cuisine Fusion Course Main Course Vegetarian Prep Time 11-15 minutes Cook time 31-40 minutes Serve Taste Mild Level of Cooking Easy Others Veg Ingredients 8 medium firm red tomatoes 1 cup quinoa Salt to taste ¼ tsp crushed black peppercorns 1 tbsp raisins 1 cup chopped spring onions 3-4 sprigs curly parsley Juice of ⅔ lemon Method Preheat oven to 180° C. Heat 2 cups of water in a non-stick pan, add quinoa, salt, crushed black peppercorns and raisins. Cover and cook for 5 minutes or till half done. Cut a thin slice from top of the tomatoes and scoop out the pulp. Place them in a baking dish. Place spring onions in a bowl. Chop parsley and add. Drain the quinoa and add to the bowl. Add a little salt and lemon juice and mix well. Stuff this mixture into the tomatoes and arrange them in a single file in the baking dish. Keep the dish in the preheated oven and bake for 30 minutes.
