Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Rabdi Burfi - SK Khazana Recipe

  • Full fat buffalo milk 1 litres

  • Castor sugar 3/4 cup

  • Mawa 1 1/2 cups

  • Nutmeg powder 1/2 teaspoon

  • Silver varq to garnish

  • Pistachio powder to garnish

Method

Step 1

Bring the milk to a boil and in a deep non-stick pan. Add sugar, mix well till melts.

Step 2

Add 1 cup mawa cook for 15 minutes while stirring periodically. Add nutmeg powder and mix well. Cook till it comes to rabdi consistency.

Step 3

Add the remaining mawa, cook, stirring continuously till the mixture thickens.

Step 4

Pour the mixture into a greased burfi tray. Allow to cool down to room temperature and keep in the refrigerator overnight.

Step 5

Garnish with silver varq and pistachio powder. Cut into cubes and serve cold.
