Ingredients list for Ragi Pancakes - SK Khazana

  • 1 cup Nachani flour (finger millet flour)
  • 1/2 cup Refined flour (maida)
  • 1/2 teaspoon Baking powder
  • to taste Salt
  • 1/4 cup Castor sugar (caster sugar)
  • 2 Eggs
  • 2 teaspoons Vanilla essence
  • 3/4 cup Milk
  • Butter 2 tablesoonps melted butter + greasing
  • Strawberries sliced, for garnish
  • Blueberries for garnish
  • Icing sugar for dusting
  • Maple syrup for garnish

Method

  1. Sieve ragi flour, refined flour and baking powder into a bowl, dd salt and castor sugar. Break in eggs and add vanilla essence, milk and melted butter and whisk till you get a smooth batter.
  2. Heat a non-stick pan, Drizzle some melted butter and wipe it with a tissue. Pour a ladle of batter and cook on medium heat till the underside is cooked. Flip and cook the other side till done. Place it on a plate. Cook more pancakes similarly.
  3. Stack the pancakes one on top of the other on a serving plate.
  4. Dust icing sugar through a sieve on top and garnish with strawberries and blueberries. Drizzle maple syrup all over and around the pancake stack and serve.
