Ingredients list for Raw Papaya Chutney

  • 2 cups Raw Papaya peeled and grated
  • 1/2 teaspoon Raisins
  • 1 1/2 tablespoons Oil
  • a pinch Asafoetida
  • 1/2 teaspoon Cumin seeds
  • 1 tablespoon Ginger finely chopped
  • 2 Green chillies finely chopped
  • 3 tablespoons Raisins
  • 1 1/2 cups Sugar
  • 1 teaspoon Red chilli powder
  • 1/2 teaspoon Black salt
  • Saffron a few strands
  • to taste Salt
  • Juice of ½ lemon

Method

  1. Heat 2 cups water in a non-stick pan, add raw papaya and cook for 3-4 minutes or till papaya becomes soft. Strain papaya into a bowl and set aside.
  2. Heat oil in another non-stick pan, add mustard seeds and when they splutter add asafoetida and cumin seeds. Sauté till fragrant.
  3. Add ginger, green chillies and raisins and saute for 2-3 minutes.
  4. Add papaya and sauté for 1-2 minutes. Add sugar and cook for 1-2 minutes.
  5. Add red chilli powder, black salt, saffron, salt and lemon juice and mix well. Cook for 6-8 minutes.
  6. Transfer into a serving bowl and serve.
