Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Restaurant Style Lahori Dal Recipe

  • Whole red lentils (sabut masoor) , soaked for 2-3 hours 1 1/2 cups

  • Salt to taste

  • Turmeric powder 1/4 teaspoon

  • Garlic , crushed 4-5 cloves

  • Green chillies , slit 2-3

  • Milk-cream mixture 1/4 cup

  • Ghee 3 tablespoons

  • Garlic , chopped 1 tablespoon

  • Cumin seeds (jeera) 3/4 teaspoon

  • Onion , finely chopped 1 medium

  • Red chilli powder 1 teaspoon

  • Garam masala powder 1/2 teaspoon

  • Lemon juice 1/2 teaspoon

  • Ginger , cut into thin strips for garnishing

  • Ghee , melted for garnishing

Method

Step 1

Heat a pressure cooker, add red lentils, salt, turmeric powder and sufficient water to cover the lentils, cover the cooker and cook under pressure till the pressure is released 5-6 times.

Step 2

Remove lid once the pressure settles completely, add crushed garlic, 1 green chilli and milk-cream mixture, mix well and cook for a minute. Add ½ cup water, mix and simmer for 10-15 minutes. Remove from heat and set aside.

Step 3

Heat ghee in a non-stick pan,add chopped garlic, mix and sauté till the slightly browned.

Step 4

Add cumin seeds and once they begin to change colour, add remaining green chillies, mix and sauté for a minute.

Step 5

Add onion, mix well and sauté till lightly browned. Add salt, red chilli powder and garam masala powder and mix well.

Step 6

Add the cooked lentil mixture, mix well and simmer for 5 minutes.Add lemon juice and mix well.

Step 7

Transfer into a serving bowl, garnish with ginger strips, drizzle melted ghee and serve hot.
