Rice Noodle Salad Rice noodles, tomatoes, cucumbers, capsicums, bean sprouts flavoured with vinegar, fish sauce and peanuts This recipe is from FoodFood TV channel By Sanjeev Kapoor 30 Oct 2015 in Recipes Course New Update Main Ingredients Rice noodles , Crushed roasted peanuts Cuisine Fusion Course Salads Prep Time 16-20 minutes Cook time 11-15 minutes Serve Taste Mild Level of Cooking Easy Others Non Veg Ingredients list for Rice Noodle Salad 200 grams Rice noodles 1/4 cup Crushed roasted peanuts 1/4 medium Green capsicum 2 medium Tomatoes 1/2 medium Cucumber peeled 1 Fresh red chilli 1/4 cup Bean sprouts 1/2 teaspoon Fish sauce 1 teaspoon Vinegar 2 teaspoons Sugar 1 medium Onion a few Fresh coriander leaves Method Soak noodles in boiling water for a few minutes. Drain well and chill in the refrigerator. Slice onion thickly. Quarter tomatoes, remove pulp and seeds and cut into thin diagonal slices. Cut green capsicum into thin slices. Quarter cucumber, remove seeds and cut into thin diagonal strips. Cut red chilli into thin diagonal slices. Mix all the above in a bowl. Add bean sprouts, noodles, fish sauce, vinegar, sugar and mix well. Add crushed peanuts and mix. Transfer into a serving plate, garnish with coriander leaves and serve immediately.
