Ingredients list for Rice Pudding With Figs And Dates

  • 1 cup Basmati Rice
  • 1/4 cup Dried Figs
  • 1/4 cup Dried dates (chuhare) chopped
  • 2 cups Milk
  • 1 inch sti Cinnamon
  • 1/4 teaspoon Lemon rind grated
  • 1 1/2 tablespoons Sugar
  • 1 teaspoon Rose water

Method

  1. Heat rice with milk in a non stick pan on low heat till it comes to boil. Add cinnamon and stir. Cook till it thickens and rice is done.Heat another non stick pan, add figs, dates and ½ cup water, mix well and cook. Add lemon rind and mix well. Cook till soft and dry.
  2. Discard cinnamon from rice mixture and add sugar. Mix well and cook for 2-3 minutes.Mash figs and dates lightly.
  3. Take off rice-milk mixture from heat and add rose water. Mix well.Put rice-milk mixture into individual bowls. Place 2 tbsps of cooked dried fruits on top. Serve warm or chilled.
