By Sanjeev Kapoor 02 Mar 2017 in Recipes Course New Update Main Ingredients Rum, Raisins Cuisine Fusion Course Desserts Prep Time 31-40 minutes Cook time 0-5 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Veg Ingredients list for Rum and Raisin Cheesecake 2 tablespoons Rum ¼ cup Raisins 1 cup Cream cheese 6-8 Biscuits 2 tablespo cup Castor sugar (caster sugar) 1 tablespoon Melted butter 1 tablespoon Coffee decoction 2 cups Whipped cream Method Take raisins in another bowl. Add rum, mix and set aside for 30 minutes. Take biscuits in a plastic zip-lock bag, seal and crush them with a rolling pin. Transfer into a bowl. Add 2 tablespoons castor sugar and melted butter and mix well. To prepare cheese cake mixture, take cream cheese in a third bowl. Add ¼ cup castor sugar and whisk with an electric beater. Add coffee decoction and whisk well.Add rum and raisin mixture and mix. Put ½ the cream cheese mixture into another bowl. Add ½ the whipped cream and fold in. Add to remaining cream cheese mixture along with remaining whipped cream and fold in well. Fill a piping bag fitted with a medium star nozzle with the cream mixture. Line individual shot glasses with biscuit-butter mixture and pipe out cream mixture over them.
