Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Sabut Pyaz ki Sabzi - SK Khazana Recipe

  • Small onions peeled 8-10

  • Oil 4 tablespoons

  • Tomatoes quartered 2 medium

  • Garlic cloves 7-8

  • Ginger roughly chopped 1 inch piece

  • Green chillies slit 1-2

  • Cumin seeds 1 teaspoon

  • Dried red chilli 1

  • Turmeric powder 1/2 teaspoon

  • Salt to taste

  • Red chilli powder 1 1/2 teaspoons

  • Yogurt 2 tablespoons

  • Kitchen king masala 1 teaspoon

  • Green chillies sliced for garnish

Method

Step 1

Make incisions on the top and bottom of the onions.

Step 2

Heat 2 tbsps oil in a non-stick pan, add the onions and sauté, turning them, till they turn golden brown all around.

Step 3

Put the tomatoes into a mixer jar, add garlic cloves, ginger, green chillies and little water and blend to a fine paste.

Step 4

Heat remaining oil in another non-stick pan, add cumin seeds and red chilli and saute till the seeds change colour.

Step 5

Add the ground paste and mix well. Add turmeric powder, salt and red chilli powder, mix well, cover and cook for 5-7 minutes or till the oil separates.

Step 6

Add onions and yogurt and mix well. Add Tata Sampann Kitchen King Masala and mix well. Cover and cook for 1 minute.

Step 7

Transfer into a serving bowl, garnish with green chillies and serve hot.
