Sai Bhaji

Ingredients 

  • 3 medium bunches spinach
  • 50 grams khatta Bhaji
  • 50 grams dill leaves
  • 3 tablespoons oil
  • 2 teaspoons cumin seeds
  • 10 garlic cloves, chopped
  • 1 inch ginger piece, chopped
  • 3 green chillies, chopped
  • 2 medium potatoes, cut into 1 inch cubes
  • 1/2 cup split Bengal gram (chana dal), soaked
  • Salt to taste
  • 1 teaspoon turmeric powder
  • 1 1/2 teaspoons red chilli powder
  • 2 tablespoons coriander powder

Method

  1. Heat oil in a pressure cooker. Add cumin seeds and sauté till they change colour.
  2. Add garlic, ginger and green chillies and continue to sauté.
  3. Chop spinach, khatta bhaji, and dill leaves
  4. Add potatoes and mix well. Add chana dal and all the greens and mix.
  5. Add salt, turmeric powder, red chilli powder, coriander powder and mix.
  6. Add a little water and mix well. Close the cooker with the lid and cook under pressure till 1-2 whistles are given out.
  7. Open the lid when the pressure reduces and blend with a hand blender.
  8. Serve hot.
