Ingredients list for Sambal Udang

  • 400 grams Jumbo prawns peeled, deveined and tail intact
  • to taste Salt
  • 2 tablespoons Oil
  • 2 small Potatoes peeled, cut into wedges and boiled
  • 2 cups Coconut milk
  • 1 tablespoon Tamarind pulp
  • Spice paste
  • 6-8 Shallots
  • 5-7 Garlic cloves
  • 4 Fresh red chillies
  • 1/2 teaspoon Shrimp paste

Method

  1. Boil three cups water in a deep non-pan, add salt and prawns. Cook for three to four minutes. Drain and set aside.
  2. Grind together shallots, garlic, red chillies and shrimp paste to a smooth paste.
  3. Heat oil in another non-stick pan, add the ground paste and sauté for a minute.
  4. Add potatoes and prawns and mix well. Add coconut milk and bring to a boil. Add salt and tamarind pulp and mix well. Simmer for two minutes.
  5. Transfer into a serving bowl and serve hot.
