Ingredients list for Sandesh Modak

  • 2 litres Full cream milk
  • 2 tablespoons Yogurt
  • 3/4 cup Castor sugar (caster sugar)
  • 1/2 cup Khoya/mawa grated
  • 1/2 teaspoon Green cardamom powder
  • 2 teaspoons Dried rose petals
  • 8-10 Pistachios blanched, peeled and slivered

Method

  1. Boil milk in non-stick pan. Add yogurt and mix well. Once the milk curdles, strain the mixture in a bowl through muslin cloth.
  2. Gather the edges and immediately refresh in chilled water to avoid carry over cooking
  3. Transfer the mixture in a parat, add sugar and mix well. Add khoya, green cardamom powder and mix again.
  4. Transfer this mixture in a non-stick pan and cook for 3-4 minutes.
  5. Add dried rose petals, pistachios and mix well and continue to cook for 2-3 minutes.
  6. Transfer the mixture on a plate and allow to cool.
  7. Transfer the mixture into modak moulds and press lightly.
  8. Demould and serve.
