You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Savoiardi Biscuits (Lady Finger Biscuits) Recipe

  • Eggs 3

  • Castor sugar 1/3 cup

  • Vanilla essence 1

  • Refined flour (maida) 3/4 cup + tablespoons

  • Cornflour 2 tablespoons

  • Salt a pinch

  • Powdered suga 1/2 cup

Method

Step 1

Preheat the oven to 180º C. Line a baking tray with a parchment sheet.

Step 2

Separate egg yolks into a bowl and put the egg whites into an electric mixing bowl attached with a whisk attachment. Whisk till it reaches soft peaks. Add ¼ cup sugar and continue to whisk till the mixture becomes thick and glossy.

Step 3

Add remaining sugar to the egg yolks along with vanilla essence and beat with an electric hand beater till the mixture is light and fluffy.

Step 4

Add some egg whites mixture to the egg yolks mixture and fold in gently till well combined. Add this into the remaining egg white mixture and whisk lightly again.

Step 5

Sift refined flour, cornflour and salt into another bowl. Add some of the eggs mixture to this and fold in gently till well combined. Transfer this mixture into the remaining eggs mixture and mix very gently and carefully.

Step 6

Transfer the batter into a piping bag and snip 1.5 cm off the tip.

Step 7

Pipe the batter into 5 inch long logs on the baking tray, leaving space between each log. These are savoiardi biscuits.

Step 8

Sift powdered sugar over them, place the tray in the preheated oven and bake for 10 minutes. Rotate the baking tray and bake for another 5-6 minutes.

Step 9

Bring the baking tray out of the oven and reduce the oven temperature to 100º C. Place the baking tray back in the oven and bake further 10-15 minutes.

Step 10

Bring the baking tray out of the oven and keep on a wire rack to cool for 5 minutes.

Step 11

Gently remove the savoiardi biscuits from the tray and allow to cool completely.

Step 12

Arrange on a serving platter and serve or store in an airtight container.
