Seekh Kebab Bread Omlette

Ingredients
- 4 chicken seekh kebabs
- 8 white bread slices
- 8 eggs
- 1 medium onion, finely chopped
- 1 medium tomato, finely chopped
- 2 tablespoons chopped fresh coriander leaves
- 3 green chillies, finely chopped
- Salt to taste
- 2 teaspoons butter + to spread
- Oil to drizzle
- Green chutney to serve
Method
- Break and add eggs in a bowl, beat it well. Add onion, tomato, coriander leaves, green chillies and salt. Mix well.
- Heat a non-stick tawa, add butter and add kebabs, drizzle oil, and cook till golden brown from all sides. Remove set aside.
- Add egg mixture on the same tawa, and spread it. Add 2 white bread slices. Press slightly. Cook on medium heat for 2-3 minutes.
- Flip on another side, place cooked kebabs in center, fold the omelette on the seekh. Dip 2 white bread slices in leftover egg mixture and place over omelette.
- Apply butter on top of the bread slices, flip and cook on another side till golden brown on both sides. Cut from the center and place one above another making a layer.
- Serve hot with green chutney.
