Shortbread Cookies Buttery cookies that go excellently well with cups of hot tea. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 27 Jul 2017 in Recipes Course New Update Main Ingredients Refined flour (maida), Vanilla pod Cuisine British Course Breads Prep Time 1-1.30 hour Cook time 26-30 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Non Veg Ingredients list for Shortbread Cookies 250 grams for dusting Refined flour (maida) 1 Vanilla pod fresh 2 Eggs 125 grams Butter Castor sugar (caster sugar) 90 grams + for sprinkling a pinch Salt Method Preheat oven at 180ºC. Slit the vanilla pod, scrape off the beans and place in a bowl. Add eggs and whisk well. Set aside. Combine butter and castor sugar in a bowl of a planetary mixer. Fit the bowl and cream on medium speed, adding the egg mixture slowly. Add flour and salt and process again till well mixed and a dough is formed. Dust the worktop with some flour. Roll out the dough into ½ inch thick sheet. Place a medium size plate on it and cut out a disc. Make marks on the disc using a palette knife without cutting through, to form wedges. Press the edges with your thumb to give impressions. Place the disc on a baking tray and refrigerate for 1 hour. Sprinkle castor sugar on the disc, put the tray in the preheated oven and bake for 20 minutes. Remove from heat and cool. Serve.
