Sooji French Fries

Ingredients list for Sooji French Fries

  • 1 cup Semolina (suji / rawa)
  • to taste Salt
  • for drizzl to deep fry Oil
  • to sprinkle Red chilli flakes
  • to sprinkle Dried oregano

Method

  1. Boil 1½ cups water in a non-stick pan, add semolina and salt and mix well. Cover and cook for 2 minutes. Uncover and cook till the mixture leaves the sides of the pan and forms a lump. Take it off the heat and let it cool down to room temperature.
  2. Place it on a piece of cling film, drizzle a little oil on it and place another piece of cling film on top and flatten slightly and roll into thick sheet.
  3. Grease a knife, and trim the edges of the semolina sheet to straighten them. Cut the remaining into fingers.
  4. Heat sufficient oil in a wok, slide in the semolina fingers and deep fry till golden brown and crisp. Drain on absorbent paper.
  5. Transfer into a bowl, sprinkle red chilli flakes, dried oregano and a pinch of salt and toss well.
  6. Transfer them into a serving bowl and serve hot.
