Ingredients for Sour Dough Open Sandwich Recipe

  • Sourdough bread loaf 1

  • Olive oil for brushi for greasing

  • Fresh basil leaves 5-6

  • Bocconcini (fresh mozzarella) 4-6

  • Red cherry tomatoes 4-6

  • Yellow cherry tomatoes 4-6

  • Salt to taste

  • Black peppercorns crushed to taste

Method

Step 1

Cut the sourdough bread into slices. Brush with olive oil.

Step 2

Rough chop basil leaves. Halve bocconcini. Preheat oven to 180º C. Grease a baking tray with some oil.

Step 3

Heat 1 tablespoon olive oil on a non-stick grill pan, place the bread sliced in it and toast, turning sides till grill marks appear on both sides.

Step 4

Place the grilled bread slices on the greased tray, top with 2-3 red cherry tomato halves, 2-3 yellow cherry tomato halves and 2-3 bocconcini halves, sprinkle some chopped basil, salt and crushed black peppercorns.

Step 5

Place the tray in the preheated oven and bake for 5-10 minutes.

Step 6

Bring the tray out of the oven, arrange the sandwiches on a serving platter and serve immediately.
