Add milk and stir continuously. Add nutmeg and mix well. Transfer into a bowl and keep in the refrigerator for half an hour. Roughly chop chicken sausages and add this to the mixture. Heat sufficient oil in a kadai. Beat egg in a bowl. Make a quenelle of the prepared mixture, dip in the egg and coat in breadcrumbs. Deep-fry in hot oil till golden and crisp on both the sides. Mix mayonnaise and grate lemon rind Serve alongwith croquetas.
