Ingredients list for Strawberry Bread Pudding

  • 8 White bread slices
  • Strawberry compote for spreading
  • Butter for greasing and spreading
  • ½ cup Sugar
  • 4 Eggs
  • 1 teaspoon Vanilla essence
  • 2 cups Milk
  • for dusting Icing sugar

Method

  1. Preheat oven to 180º C. Grease a large oval glass baking dish with some butter.
  2. Discard the edges of the bread slices.
  3. Spread some butter on 4 slices and some strawberry compote on the remaining slices. Cover each buttered slice with the remaining slices, strawberry side down.
  4. Cut each sandwich into 4 equal pieces.
  5. To prepare custard, combine sugar, eggs and vanilla essence in a bowl and whisk with an electric beater. Add milk gradually and whisk well.
  6. Line the greased baking dish with bread pieces and pour custard mixture on top.
  7. Place the baking dish on a baking tray. Place the tray in the preheated oven and bake for 40-50 minutes or till the custard is set. Remove from oven and cool.
  8. Dust with icing sugar and serve immediately.
