If there is one vegetable that is truly a nutritional hero then it is bound to be the carrot. A goldmine of nutrients, this is the reason they can be even termed as worth the other ‘karat’ (as in gold)! Ranging in colours from orange, black, pink to red, yellow and white, this delicious vegetable is within the reach of rich and poor alike and is rightly called the universal root. The best role that this winter vegetable can play – chomp on one as it is an excellent snack!

Ingredients for Sugar Free Gajar Halwa Recipe

  • Carrots grated 8-10 medium

  • Skimmed milk 2 cups

  • Pure ghee 3 tablespoons

  • Green cardamom powder 1/4 teaspoon

  • Sultanas 10-15

  • Sugar 3/4 cup

  • Grated khoya 1/4 cup

  • Pistachios blanched peeled and sliced 10-12

Method

Step 1

Heat the pure ghee in a non-stick kadai. Add the grated carrots and sauté for about five minutes.

Step 2

Add the skimmed milk and cook.

Step 3

Add the green cardamom powder, sultanas, sugar and mix. Cook for about ten to fifteen minutes.

Step 4

Add the khoya and mix. Cook till the mixture is almost dry. Garnish with pistachios.

Step 5

Serve warm.
