By Sanjeev Kapoor 06 Oct 2016 in Recipes Course New Update Main Ingredients Refined flour tortillas, Mozzarella cheese Cuisine Mexican Course Snacks and Starters Prep Time 11-15 minutes Cook time 0-5 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients list for Summer Vegetable Burrito 4 Refined flour tortillas 1 cup Mozzarella cheese grated ¼ cup Summer vegetable mix 1 cup Mexican rice 8 tablespoons Refried beans 1 cup Pico De Gallo ½ cup Sour cream to serve Roasted tomato salsa to serve Mango crumbled cheese salad Method Warm tortillas on a hot tawa, and brush butter on them. Spread some 3 tablespoons Mexican rice, 1 tablespoon grated mozzarella, 2 tablespoons refried beans, 2 tablespoons summer vegetable mix, 1½ tablespoons Pico De Gallo and sour cream on each of them. Bring the sides of each tortilla toward the center of the filling. Fold the bottom of the tortilla up over the filling and continue to roll until it becomes a tight cylinder.
