Heat oil in a deep non-stick pan and add lemongrass. Grate the rind of 1 lemon. Add ginger to the pan and sauté till fragrant. Add rice and mix well. Add lemon rind and mix again. Roughly chop bird’s eye chillies with stem intact and add to the pan. Add salt, vegetable stock and lime leaf and mix well. When the mixture comes to a boil, reduce heat, cover and cook till the rice is fully done. Transfer into a serving bowl and serve hot.
