By Sanjeev Kapoor 04 May 2016 in Recipes Course New Update Main Ingredients Cauliflower, Green Curry Paste Cuisine Thai Course Main Course Chicken Prep Time 16-20 minutes Cook time 26-30 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Ingredients list for Thai Green Curry At Home 1/2 small Cauliflower separated into florets 1 medium Green Curry Paste cut into diamonds 2-3 Baby brinjals halved lenghtwise 5-6 Shallots 2-3 bunches Pea brinjals 1 Red capsicum 1/2 inch pieces 2 tablespoons Oil to taste Salt 3/4 cup Fresh coconut milk 3-4 Fresh basil leaves 1 teaspoon Lemon juice 1 Fresh red chilli,diagonally sliced Green curry paste 10 Green chillies a small bu blade Coriander roots 3 inches Lemon grass roots 3 Shallots 8 cloves Garlic 1 inch piece Galangal 2 teaspoon Coriander seeds 2 teaspoons Cumin powder 1/4 bunch Fresh coriander leaves Method To make the green curry paste, place the green chillies in a mixer container. Add coriander roots, lemon grass root, shallots, garlic, galangal, coriander seeds, cumin seeds, coriander leaves, salt and a little water and grind to a smooth paste Heat a wok, add oil and the ground paste and sauté for two minutes. Add cauliflower, carrot, brinjals and shallots and a little water and cook. Add pea brinjals and salt and cook till the vegetables are done. Add red capsicum and coconut milk and stir. Add torn basil leaves, lemon juice and also the lemon skin. Stir and cook for two minutes. Remove the lemon skin Garnish with red chilli slices and serve hot.
