Ingredients list for Thai Green Curry Chicken Rice
- 300 grams Boneless chicken , cut into 2 inch pieces
- 2 1/2 tablespoons Thai green paste
- 1 1/2 cups Jasmine rice
- 1 tablespoon OIl
- 5-6 Button mushrooms
- 1 Fresh Thai red chilli
- 2 cups Chicken stock
- to taste Salt
- 6-8 Broccoli florets
- 2 teaspoons Palm sugar
- 1 cup Coconut milk
- 1 Lemon
- to serve Fresh Thai basil sprig
Method
- Heat oil in a non-stick pan, add Thai green curry paste, and sauté well.
- Add chicken and mix well. Slice button mushrooms and add and mix.
- Add fresh red chilli and mix well. Saute for 4-5 minutes.
- Add rice and mix well. Add chicken stock, mix well. Add salt, mix well, cover and cook for 4-5 minutes.
- Take the lid off and add broccoli and palm sugar and mix well. Add coconut milk and mix well. Cover and cook till chicken and rice are cooked completely.
- Transfer into a serving plate. Cut lemon into slices. Garnish the rice with lemon slices and Thai basil sprig and serve hot.
