Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Thai Green Curry Chicken Rice Recipe

  • Boneless chicken , cut into 2 inch pieces 300 grams

  • Thai green paste 2 1/2 tablespoons

  • Jasmine rice 1 1/2 cups

  • OIl 1 tablespoon

  • Button mushrooms 5-6

  • Fresh Thai red chilli 1

  • Chicken stock 2 cups

  • Salt to taste

  • Broccoli florets 6-8

  • Palm sugar 2 teaspoons

  • Coconut milk 1 cup

  • Lemon 1

  • Fresh Thai basil sprig to serve


Step 1

Heat oil in a non-stick pan, add Thai green curry paste, and sauté well.

Step 2

Add chicken and mix well. Slice button mushrooms and add and mix.

Step 3

Add fresh red chilli and mix well. Saute for 4-5 minutes.

Step 4

Add rice and mix well. Add chicken stock, mix well. Add salt, mix well, cover and cook for 4-5 minutes.

Step 5

Take the lid off and add broccoli and palm sugar and mix well. Add coconut milk and mix well. Cover and cook till chicken and rice are cooked completely.

Step 6

Transfer into a serving plate. Cut lemon into slices. Garnish the rice with lemon slices and Thai basil sprig and serve hot.
