By Sanjeev Kapoor 19 Nov 2016 in Recipes Course New Update Main Ingredients Basmati rice, Fresh coriander leaves Cuisine Thai Course Rice Prep Time 11-15 minutes Cook time 0-5 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Thai Green Rice 3 cups Basmati rice cooked ½ medium bunch Fresh coriander leaves 12-16 Fresh basil leaves 2-3 Kaffir lime leaves 1 Lemon grass stalk 5-6 Garlic cloves 8-10 Shallots ½ inch Galangal Lemon juice of 1 lemon 2 tablespoons Olive oil to taste Salt to taste Crushed black peppercorns for garnishing Basil leaves to serve Lemon wedges Method Roughly chop coriander leaves and place in a grinder jar. Add basil leaves and torn kaffir lime leaves. Roughly chop lemongrass stalk and add along with garlic and shallots. Roughly chop galangal and add along with lemon juice and grind into a smooth paste. Add 1 tablespoon olive oil and grind again. Add salt and crushed peppercorns and mix well. Heat remaining olive oil in a non-stick wok. Add ground paste and sauté for 1-2 minutes. Add rice, mix and toss well. Let it get heated through.
