Ingredients for Thai Mini Pizza - SK Khazana Recipe

  • Thai curry paste 1 tablespoon

  • Mini pizza bases 4

  • Mozzarella cheese grated as required

  • Olive oil 1 tablespoon

  • Garlic cloves finely chopped 1 teaspoon

  • Ginger finely chopped 1/2 teaspoon

  • Onion finely chopped 1 small

  • Button mushrooms sliced 10-12

  • Salt to taste

  • coriander leaves chopped 2 tablespoons

  • coriander sprig for garnish

Method

Step 1

Preheat oven to 180° C.

Step 2

Heat oil in a non-stick pan, add garlic, ginger and onion, mix and sauté till onion is translucent. .

Step 3

Add Thai red curry paste, mix well and saute for 1-2 minutes. Add mushrooms and salt, mix well and saute for 6-8 minutes.

Step 4

Add coriander leaves, mix well and saute for 1 minute. Take the pan off the heat.

Step 5

Place the pizza bases on a baking tray, sprinkle some grated mozzarella cheese on each and top it up with some mushroom mixture. Sprinkle a little cheese on top, place the tray in the preheated oven and bake till the cheese melts.

Step 6

Place the pizzas on a serving platter, garnish with coriander sprigs and serve hot.
