Ingredients

  • 1 tablespoon red thai curry paste
  • 4 mini pizza bases
  • Grated mozzarella cheese as required
  • 1 tablespoon olive oil
  • 1 teaspoon finely chopped garlic
  • ½ teaspoon finely chopped ginger
  • 1 small onion, finely chopped
  • 10-12 button mushrooms, sliced
  • Salt to taste
  • 2 tablespoons freshly chopped coriander leaves
  • Coriander leaves for garnish

Method

  1. Heat oil in a non-stick pan, add garlic, ginger, and sauté well. Add onion and sauté well. Cook till translucent.
  2. Add red thai curry paste and mix well. Cook for 1-2 minutes. Add mushrooms, salt and mix well. Cook for 6-8 minutes, sautéing occasionally.
  3. Add chopped coriander and mix well. Cook for 1 minute and take it off the heat.
  4. Place the pizza bases on the baking tray, sprinkle a portion of the grated mozzarella cheese on each and place a portion of the prepared mixture.
  5. Sprinkle a little cheese on top and place it in oven. Bake till the cheese melts.
  6. Garnish with coriander leaves and serve hot.
