Ingredients
- 3-4 large potatoes
- 1 tablespoon Thai red curry paste
- 1 tablespoon red chilli paste
- Salt to taste
- 3-4 tablespoons coconut milk
- 1 lemon
- 2-3 teaspoons honey
- Lemon juice to drizzle
Method
- Cut potatoes into wedges without peeling.
- Put Thai red curry paste, red chilli paste, salt and coconut milk in a bowl and mix well. Grate some zest of lemon into the bowl. Add potato wedges and mix till the potatoes are well coated.
- Add honey and mix well. Place these wedges in a single file in the air fryer basket and fry at 200ºC for 5 minutes, then reduce the temperature to 180ºC and fry for 5 minutes more.
- Transfer onto a serving plate, drizzle a little lemon juice, and serve hot.
