By Sanjeev Kapoor 27 Mar 2017 in Recipes Course New Update Tofu and White Beans Chilli Main Ingredients Tofu, Fresh red chilli Cuisine Fusion Course Main Course Vegetarian Prep Time 11-15 minutes Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients 200 grams tofu, cut into cubes 1 fresh red chilli, roughly chopped 1 cup tinned cannellini beans ¼ medium bunch fresh coriander leaves 1 tablespoon olive oil 3-4 garlic cloves, chopped 1 medium onion, chopped 1 medium red capsicum, chopped 1 medium yellow capsicum, chopped 2 teaspoons cinnamon powder 1 tablespoon cumin powder 1 teaspoon smoked paprika 1 cup tomato concasse Salt to taste Method Pick the coriander leaves and finely chop the stems. Heat olive oil in a non-stick pan. Add garlic, onion, chopped coriander stems, red chilli, red capsicum, yellow capsicum, cinnamon powder, cumin powder and paprika, mix and sauté for 15 minutes, stirring once in a while. Add beans with the liquid and tomato concasse and mix well. Add tofu, little water and half the coriander leaves and salt and mix well. Let the mixture come to a boil.
