Ingredients list for Tomato Panchamrit

  • 250 grams Ripe Red Tomatoes 1/2 inch pieces
  • 2 teaspoons Oil
  • 1/4 teaspoon Mustard seeds
  • 2-3 Green chillies slit
  • a pinch Asafoetida
  • 1/4 teaspoon Turmeric powder
  • to taste Salt
  • 2 teaspoons Jaggery (gur) grated
  • 1/4 cup Roasted peanuts crushed
  • 2 tablespoons Fresh coriander leaves chopped

Method

  1. Heat oil in a kadai and add mustard seeds. When they crackle, add green chillies. Sauté for half a minute and add asafoetida and turmeric powder.
  2. Add tomato pieces, salt and jaggery and stir to mix well. Cover, reduce heat and cook till the tomatoes become soft.
  3. Add crushed roasted groundnuts and mix well. Garnish with coriander leaves and serve hot.
