Ingredients list for Tuna Cakes-Cook Smart

  • 1 tin Tuna
  • 1 Medium onion
  • 2 Garlic cloves
  • 4 Eggs hard boiled and peeled
  • 2 Medium potatoes boiled and peeled
  • to taste Salt
  • 1 teaspoon Schezwan chutney
  • for greasi to shallow fry Oil
  • 4-5 Salad leaves
  • for garnish Micro greens

Method

  1. Quarter the onion and roughly chop garlic and put both into a grinder jar. Halve the eggs and put into the grinder jar and grind into a coarse mixture. Transfer mixture into a mixing bowl.
  2. Strain excess liquid from tuna and add to the ground egg mixture. Grate potatoes into it.Add salt and mix well.
  3. Add schezwan chutney and mix well. Refrigerate the mixture till chilled.
  4. Grease your palms with oil. Heat some oil in a non-stick pan.
  5. Divide the tuna mixture into large equal portions and shape them into cakes. Place these cakes in the pan and shallow-fry, turning sides carefully, till evenly golden on both sides.
  6. Tear salad leaves and place on a serving platter. Put tuna cakes on it, garnish with some micro greens and serve hot.
