By Sanjeev Kapoor 14 Jun 2014 in Recipes Course New Update Main Ingredients Rice , soaked in salt water, Olive oil Cuisine Other Course Rice Prep Time 16-20 minutes Cook time 31-40 minutes Serve 4 Taste Select Taste Level of Cooking Easy Others Veg Ingredients list for Turkish Rice 1 1/2 cups Rice , soaked in salt water 4 tablespoons Olive oil 2 medium Carrots,diced 2 tablespoons Hazelnuts 2 tablespoons Pine nuts(chilgoza) to taste Salt 3 Stock cubes,crushed 2 tablespoons Blackcurrants Method Heat olive oil in a pan. Add carrots and fry for a couple of minutes. Drain and set aside. In the same oil add hazelnuts and pine nuts and fry till lightly browned. Drain and set aside. Drain and add the soaked rice to the remaining oil in the pan and sauté for about two minutes. Add three cups of water and bring it to a boil. Add salt and crushed stock cubes and mix. Add small black currants and mix. Add the fried nuts and cook till most of the water is absorbed. Add the fried carrots and mix. Cover and cook on low heat till done.
