White Pumpkin Kootu

A simple gravy prepared with white pumpkin, chana dal, and freshly ground spices. Serve this with hot rice. This is a Sanjeev Kapoor exclusive recipe.

Ingredients

Masala

  • ½ cup scraped fresh coconut
  • 1 tablespoon cumin seeds
  • 4 green chillies
  • 1 teaspoon peppercorns
  • 1½ teaspoons raw rice

Tempering

  • 1 teaspoon mustard seeds
  • 2 whole red chillies
  • 1 tsp split skinless black gram.
  • 10-12 curry leaves
  • 2 tablespoons gingelly oil.
  • ¼ teaspoon asafoetida

Method 

  1. Peel, deseed and cut the pumpkin into small cubes.
  2. Grind the masala ingredients to a smooth paste.
  3. Cook the pumpkin in 2 cups water, salt and turmeric powder.
  4. When half done, add the masala and simmer till it thickens. Stir frequently.
  5. Heat oil and temper with the above ingredients.
