Take yeast in a bowl. Add 2 tablespoons warm water and mix well. Set aside. Combine flour and salt in another bowl. Add dissolved yeast and 1-1½ cups water and knead into a soft dough. Add oil and knead again. Cover and set aside for 10-15 minutes. Dust a worktop with flour and roll out a portion of dough into a 1 inch thick sheet. Cut out circles using a ring cutter dipped in flour. These are pita breads. Arrange pita breads on a baking tray, cover with a moist cloth and set aside for proving for 10-15 minutes.
