Mediterranean food is immensely popular all over the world. The wonderful aromas and flavours of the varied cuisines of this region tend to leave a lasting impression on all those who appreciate good food.  Two adjectives – robust and intense – beautifully describe the range of dishes from coastal Spain through France, Italy, Greece, Turkey and along North Africa.
These countries have influenced each other’s food habits over the years and their cooking has evolved into sharing common principles. There is a great regional diversity between the countries around the Mediterranean Sea and yet there are so many similarities. The hall mark of Mediterranean cuisine is its flexibility, the vast range of ingredients and its numerous variations.

Ingredients for Zalabia Recipe

  • FOR DOUGH

  • Refined flour (maida) 3 cups

  • Fresh yeast 1/4 cup

  • Olive oil to deep fry

  • Sugar to sprinkle

  • Cinnamon powder to sprinkle

  • For sugar syrup

  • Sugar 2 cups

  • Rose water 2 tablespoons

  • Orange zest 2 tablespoons

  • Lemon juice 2 tablespoons

Method

Step 1

To prepare the syrup dissolve the sugar in one cup of water over low heat. Add rose water, orange zest and lemon juice and simmer till it comes to a boil. Set aside to cool.

Step 2

Dissolve yeast in one cup of warm water in a bowl and let it stand till the yeast ferments. Add the flour, little by little, and knead into a dough. Cover the dough with a clean cloth and set aside till it doubles in size.

Step 3

Heat oil in a deep pan. Take a portion of the dough, make hole in the centre and drop each piece into the oil. Deep fry until golden brown, drain and while still warm, dip into the cold syrup for five to ten minutes.

Step 4

Drain excess syrup, sprinkle with sugar and cinnamon powder and serve.
