Ingredients

 

·         8 chicken drumsticks

·         2 tbsps olive oil + for drizzling

·         Salt to taste

·         Salad to serve

·         Thousand island dip to serve

·         Italian seasoning

·         ¾ tbsp dried basil

·         ½ tbsp dried oregano

·         2 tsps dried rosemary

·         ¼ tsp dried thyme

·         2 tsps red chilli flakes

·         1 tsp garlic powder

·         ½ tsp onion powder

·         1 tbsp dried parsley

·         ½ tsp black pepper powder

 

Method

 

1.      To make Italian seasoning, mix together dried basil, dried oregano, dried rosemary, dried thyme, red chilli flakes, garlic powder, onion powder, dried parsley and black pepper powder in a small bowl.

2.      Place the chicken drumsticks in a large shallow bowl. Make slits on both sides of the drumsticks. Drizzle olive oil, sprinkle salt and 1 tsp Italian seasoning and rub in well. Set aside for 10-15 minutes.

3.      Heat 2 tbsps olive oil in a non-stick pan. Place the marinated chicken drumsticks and cook on high heat for 3-4 minutes. Flip each drumstick and cook the other side for 3-4 minutes on high heat. Reduce the heat to medium, cover and cook till the chicken is done.

4.      Serve hot with salad and thousand island dip.
